Preheat the oven to 200°C / 400°F. Line a small baking dish with parchment paper for easy cleanup.
Wash the peaches and plums thoroughly. Cut them in half, remove the pits, and slice into thick wedges. Leave the skins on, as they contain valuable nutrients and fiber.
Place the fruit wedges into the prepared baking dish. Drizzle with the melted coconut oil, sprinkle with ground cinnamon, and add the vanilla extract. Toss gently until the fruit is evenly coated.
