Steps
Slice the watermelon, remove the rind, and carefully pick out all black and white seeds to ensure a safe, smooth texture for your baby.
Cut the seeded watermelon flesh into small chunks and place them into a blender.
Pour the full-fat coconut milk into the blender with the watermelon. Blend on high speed for 1-2 minutes until the mixture is completely smooth and frothy.
Pour the blended liquid evenly into baby-safe silicone popsicle molds, leaving a small gap at the top of each mold as the mixture will expand while freezing.
Freeze for at least 3 to 4 hours, or overnight, until completely solid. Before serving, run the outside of the mold under warm water for a few seconds to release the popsicle easily.
Frequently asked questions
Can I use low-fat or carton coconut milk?
For babies under 2 years, full-fat canned coconut milk is highly recommended as they need healthy fats for optimal brain development and energy.
What if I don't have popsicle molds?
You can freeze the mixture in standard ice cube trays. Once frozen, place a cube inside a baby-safe mesh or silicone feeder, or gently pulse the cubes in a blender to create a soft, spoonable slush.
Is this safe for a 6-month-old?
Yes, watermelon is a great early food! For younger babies just starting solids, you can serve the blended liquid chilled as a puree rather than freezing it, or allow the popsicle to melt slightly so it's softer on their delicate gums.
